About our pastured pork

Our heritage breed hogs are humanely raised on our 88 acre farm just outside of Tiskilwa, IL. During the spring, summer, and fall our pigs spend their days out on pasture where they can forage, root, wallow, and express all their natural behaviors.

In winter, when the pastures have stopped growing, we provide our pigs with high-quality alfalfa hay grown here on our farm.

We grind our own feed for the pigs using grain organically grown on our farm as well as other locally sourced non-GMO ingredients. The meat is antibiotic and hormone free and absolutely delicious.

Purchasing our Pork

We raise our pigs until they are about 6-8 months old and weigh approximately 250-300 lbs. The pork is then brought to Bittner's Eureka Locker in Eureka, Illinois, a small USDA inspected meat locker. Pork can be purchased as a half hog, whole hog, or a 25 pound sampler pack. A half hog takes up around 4-5 cubic feet of space in a freezer, about the room in an average kitchen fridge freezer compartment.

Below is a breakdown of the major cuts from a typical half hog.

Breakdown of Typical Half Hog

  • 12-14 lbs chops
  • 2 shoulder roasts (around 3.5 lbs each)
  • 8-10 lbs of bacon
  • 1 ham (15-18 lbs)
  • 2 ham hocks
  • 15-20 lbs of ground pork and/or sausage
  • 1 package of spare ribs (around 3.5 lbs)
  • 4 lbs of lard
  • additional packages (neck bones, liver, heart)
Total packaged meat: Approx. 65-70 lbs

25 pound Pastured Pork Sampler Pack

Below is an estimate of what you will receive in your 25 pound pastured pork sampler pack. There may be slight variations in the package but this gives you a pretty good sense of what cuts will make up your 25 pounds.

4-5 pounds of bone-in pork chops
1 (5-6 pounds) ham roast or shoulder roast

4-6 pounds mixture of sausage (combination of breakfast sausage, bratwursts, and Italian sausage)
